I joined Blue Apron and a couple other services in the past as I thought this would help reduce waste. The only problem with these services is that when you get a delivery, you have to eat the food within a few days or it goes bad unless you freeze what you can.

I found that I was creating my schedule around my deliveries. It eliminated spontaneity of going out to dinner with friends. In the back of my mind I knew I had to cook my meal at home or it was going to go bad. So while the services helped out with portions and simplifying cooking, I was still occasionally throwing out food.

Thrive Life will give me the best of both worlds. Thrive Life will allow me to have meals and groceries delivered right to my door without the worry of the food going bad if I do not eat it within a few days.

THE JOURNEY CONTINUES…  In my last couple blog posts I discussed the health benefits of drinking and cooking with coffee. Coffee is high in antioxidants which are good for you. As I mentioned, I was going to begin testing and creating new recipes PJs Logo 2-19 Croppedutilizing PJ’s Roasted Bean Coffee as an ingredient and posting those recipes here on my blog.

I discussed this project with a couple close friends, who like me love to cook. I asked them if they wanted to join me on this journey and create a cookbook with me, utilizing coffee as an ingredient in all of the recipes. They were excited and are on board with the project. As my blog homepage states, life is about the journey and trying new things. Living Xtreme.  Now, although I have already written and published a book that was a #1 New Release on Amazon.com in the Risk Management Section (Non-Profit Guidance for the Non-Profit Board Member), I have never published a cookbook.

We will be testing and creating both healthy and not so healthy recipes. However, all of them will be tasty and easy to make. We may include a few recipes that are a bit more complicated, but for the most part they will be recipes you can make every day of the week. There will be appetizers, dressings for salads and marinades, rubs for vegetables and meats, desserts, cookies, ice cream and more.

I tested and created the first recipe this weekend. It happens to be a healthy recipe. I figured we should start with something healthy and a little different and that most people wouldn’t think of doing.  I didn’t want to do something obvious like Tiramasou. I wanted to try and peak your interest. So I hope you like it.

The first recipe is a rub for roasted vegetables. It was fun trying different combinations of spices and vegetables to see what worked best. Now you will notice I did not include potatoes in this recipe and that was intentional. I will be providing another recipe that includes fingerling potatoes and brussel sprouts and maybe some sweet potatoes.

I will be posting a picture with each recipe. I will also post a brief discussion on things I tried and why I determined the ingredients I did over others that are listed in each recipe. I hope you will join me on this journey in a culinary adventure of unique and tasty cuisine.

While I will be using different ingredients, the one ingredient that will be the same in all of our recipes is coffee, and not just any coffee.

The coffee we will be using in our recipes is from PJ’s Roasted Bean Coffee Company. The beans used are quality, AA Arabica beans. But more importantly, the coffee beans are infrared roasted by Healthy Coffee Lifestyles.Infrared roastedbeans are never bitter, never burnt, always smooth and have a much fuller flavor. They also produce a lower acidic flavor allowing those with stomach sensitivities to also enjoy the coffee. It makes Healthy Coffee Lifestyles coffee, the perfect ingredient in our recipes.

First Recipe!

Coffee Roasted Veggies with Chili
Serves 6-8

Vegetables:
1 Pound of Broccoli cut into large bite size pieces
1/2 Pound of Baby Carrots or Regular Carrots sliced into 2″ to 3″ pieces
1 Red Onion
6-8 Cloves of Garlic (or more if you like roasted garlic)

Spice Rub:
2 Teaspoons of PJ’s Infrared Roasted Coffee Grounds
1 Teaspoon Chili Powder (use your favorite)
1/2 Teaspoon Sweet PaprikaJoe Medrano, Coffee Roasted Veggies, Healthy, Healthy Lifestyles, Coffee
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
1/2 to 1 Teaspoon Thyme – (1/2 Dried – 1 Fresh)

Extra Virgin Olive Oil
2-3 Tablespoons (or enough to coat veggies to your liking)

Directions:
Preheat oven to 400 degrees F

Chop the veggies and put into a large bowl. Combine the ingredients of the spice rub in a small bowl and mix well.

Coat the vegetables with the olive oil and then add the mixed spice rub in and mix the vegetables, olive oil and spice rub together.

Once the vegetables are coated well, place in a single layer on a baking sheet or pan and roast for 25-35 minutes. (Depending on your oven)

That’s it. Pretty simple but very tasty.

When I was experimenting with a few different batches, I tried cauliflower and zucchini and red bell peppers as well.  I was not thrilled with the cauliflower but I did like the zucchini and red bell pepper. I did not include the bell pepper in the final recipe as many people do not like bell peppers and the zucchini came out a bit soft. Again, this is more of a consistency preference than taste. But by all means you could include it in your dish.

I hope you find this as interesting and tasty as I did.  If you want to add even more flavor, put these at the bottom of a roasting pan underneath a whole chicken that you are roasting and let the drippings from the chicken meld into the vegetables.  Yum! Not as healthy, but very tasty.

Did you know that coffee is a great source for antioxidants? Americans get more PJs Logo 2-19 Croppedantioxidants from coffee than from any other source of food. And if you drink your coffee black with no cream or sugar, coffee can be a good can be a good way to help give your health a little guilt free boost.

 

 

 

Now even though there are over 400 billion cups of coffee consumed every year around the world, not everybody likes to drink black coffee.  So how can you get the benefits of the high antioxidants in coffee? By cooking with it. There have been many great recipes created over the years that utilize brewed black coffee, whole beans and/or ground coffee.

But why should you care about antioxidants? What do they do? Antioxidants, help cells in your body from being oxidized by toxins, chemicals and inflammation. They can help with the management or prevention of some medical conditions, such as some cancers, arthritis-related conditions, and may even help with slowing Alzheimer’s disease.

Most people think about the health benefits they get from drinking coffee, not eating the coffee bean. You can actually get more antioxidants from eating coffee grounds than drinking coffee. Now I am not suggesting you should start buying coffee and just eat the Healthy Coffee Lifestyles, Joe Medrano, Benefits of Coffee, antioxidantsgrounds instead of making coffee.

What I am suggesting is, if you haven’t already, you should consider trying to cook with coffee. While there are a lot of recipes out there using coffee in deserts, there are also plenty of recipes for savory and healthy foods as well.

I have been trying different coffee recipes out and making modifications to some and also trying them with different types of coffee beans. And yes, believe it or not, some recipes you can tell the difference in flavor depending on the bean.

Being a coffee lover, I do have a preference for AA Arabica beans. AA Arabica beans have a fragrant aroma and rich body. And at PJ’s Roasted Bean Coffee Company we infrared roast the beans so the beans are never bitter, never burnt, always smooth and have a fuller flavor.

I know I sound like I am talking about wine (which I am a big fan of as well), but if you haven’t noticed, coffee has come along way and their are more specialty coffee companies popping up all over. You will find many coffee shops have tasting notes on their various coffees just like a fine wine.

However, approximately only 2% of coffee is infrared roasted worldwide because the process to roast costs a little more for coffee companies. We infrared roast all of our coffee because we believe in providing better coffee to our clients so they can provide a better cup of coffee to their customers.

We also believe in a healthy lifestyle and the infrared roasting process helps the coffee have higher antioxidants.

Over the next few weeks some of my blog posts will start containing recipes utilizing coffee in them. Some will be healthy, some will be less healthy, but all will be really good, especially the ones for those of us with a sweet tooth.

I might even include some videos. I hope you will join me on my continued journey of discovery of coffee, its health benefits, and living a healthy lifestyle. You might even see a recipe or two that you like.

I am learning more and more that diet sodas and artificial sweeteners are not good for you and cause faster weight gain than had I consumed a regular soda.

There is no perfect weight or body size. The important thing is to be healthy and feel good about yourself no matter what.

How can you start living a healthier lifestyle? Here are a few steps:

  1. Change Your Mindset
  2. Set Attainable Goals
  3. Set Up a Support System
  4. Make Healthier Choices – Eat Right Not Less
  5. Start Moving – Sweat is good
  6. Most Importantly – Stick With It!

If you “fall off the wagon” it’s okay. Just brush yourself off and get right back up. Remember, you are working on a long-term healthy lifestyle not a short term diet or phase.

You may have one of those weekends or weeks where you put on a few pounds. We all do it. Just get back in to your healthy routine (without making it feel like a routine) and you will be fine.

Peanut Butter Chocolate Crinkles Joe Medrano, Xtreme Healthy Lifestyles, Peanut Butter Chocolate Crinkles
7 ounces of bittersweet chocolate (no sugar added) Chopped – Or 1 cup semi chocolate chips
½ cup (1 stick) unsalted butter
½ cup chunky or creamy peanut better – almond butter can be used instead
3 eggs
½ cup of XHL Sweetener
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
¼ cup unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon salt
1 cup powder sugar

Place chocolate, butter and peanut butter in a double boiler pot.
Cook, stirring until all melted. Let cool to figure touch.

While the chocolate is cooling, mix eggs, sweetener and vanilla until creamy.
Slowly add the warm chocolate mixture to the eggs mixture. Blend until creamy.
Add the flour, cocoa powder, baking powder and salt.
Mix completely

Cover with plastic wrap and refrigerate at least 2 hours or overnight.
Prepare oven to 350 degrees and 2 large baking sheets with parchment paper

Place powder sugar into a shallow bowl
Shape dough into 1 ½ “ball and place on prepared pans.
Return to the refrigerator for 10 minutes
Take each ball and roll them into the powder sugar and place them back on the pan 1” apart.

Bake for 12 to 15 minutes. Let cool completely. Makes about 4 dozen.

CNN just published an article on the health benefits of coffee. The article was based on a Joe Medrano, Healthy Coffee Lifestylesstudy posted on Science Daily from the European Society of Cardiology.

New research suggests that drinking four cups of coffee each day can be part of a healthy diet in healthy people.

Over the years there have been many studies and reports that drinking coffee can be beneficial.

The American Heart Association once reported that, people who regularly drank moderate amounts of coffee daily –less than 5 cups per day — experienced a lower risk of deaths from cardiovascular disease, neurological diseases, Type 2 diabetes and suicide. The benefit held true for drinking caffeinated and decaffeinated coffee, suggesting it’s not just the caffeine providing health perks but possibly the naturally occurring chemical compounds in the coffee beans.

We know coffee can be beneficial for us to drink daily. But what most of us do is add cream, sugar, sweeteners, and more which can offset the benefits of the coffee.

Who likes to drink their coffee black?  Many less people than those who prefer to have a latte, mocha or some other sugary drink.  Part of the reason people add so many different additives to their coffee is because they do not like the taste of plain black coffee.

Infrared Roasting vs Conventional Roasting

Standard Commercial roasting puts the beans on a flat screen conveyor which roasts the beans by blowing flame heated hot air from below. Another method is to place the beans in a tumbler and then blow the flame heated, hot air through as they tumble. Infrared roasting brings out the desired flavor and aroma in the coffee bean. Infrared roasting technology leads to lower acidity levels, an evenly roasted bean, and completely eliminates a burnt or bitter coffee taste.

Infrared roasting is a better method to roast coffee, but only about 2% of coffee is infrared roasted. In addition to providing a better tasting coffee, infrared roasting also reduces the acidity in coffee allowing people with more sensitive stomachs to enjoy a cup of coffee.

As a former Clayton Councilman and Vice Mayor, I see the city of Clayton CA continues to evolve. I am proud to be an involved member of the community of Clayton CA. My time volunteering with the Clayton Business and Community Association (CBCA), Clayton Joe Medrano Clayton CA, Clayton Art & Wine FestivalValley Charter High School (CVCHS), and engaging with current Clayton Council Members, has allowed me to continue to help the community.

For the 2017 and 2018 Clayton Art & Wine Festival I continue to be the Chairman of the Beer and Wine Committee. Through these events, with my help, the CBCA has increased the net profits from this fundraising event.

Through relationships with wine industry leaders and insurance clients, I continue to be able to secure significant donations to maximize the profits of this charitable event. All of the proceeds are invested back into the local community, schools, college scholarships, and other worthy non-profits.
