I would like to share a great recipe using the low-glycemic sweetener. The recipe is provided by Karin Raitz who is an independent rep with Xtreme Healthy Lifestyles.
Peanut Butter Chocolate Crinkles
7 ounces of bittersweet chocolate (no sugar added) Chopped – Or 1 cup semi chocolate chips
½ cup (1 stick) unsalted butter
½ cup chunky or creamy peanut better – almond butter can be used instead
½ cup of XHL Sweetener
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
¼ cup unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon salt
1 cup powder sugar
Place chocolate, butter and peanut butter in a double boiler pot.
Cook, stirring until all melted. Let cool to figure touch.
While the chocolate is cooling, mix eggs, sweetener and vanilla until creamy.
Slowly add the warm chocolate mixture to the eggs mixture. Blend until creamy.
Add the flour, cocoa powder, baking powder and salt.
Cover with plastic wrap and refrigerate at least 2 hours or overnight.
Prepare oven to 350 degrees and 2 large baking sheets with parchment paper
Place powder sugar into a shallow bowl
Shape dough into 1 ½ “ball and place on prepared pans.
Return to the refrigerator for 10 minutes
Take each ball and roll them into the powder sugar and place them back on the pan 1” apart.
Bake for 12 to 15 minutes. Let cool completely. Makes about 4 dozen.
